This is the actual recipe inspired by Up our series of 2010 Oscar Party Dishes.
You may not have your Wilderness Explorer badge for cooking yet, so here’s a simple recipe for potato skins with a dollop of garlic herbed sour cream that will earn you your badge. Maybe you can take some to that elderly man you’ve been trying to help.
- 3 large baking potatoes
- bacon bits
- mild cheddar cheese, shredded
- 1/2 cup sour cream
- 1/2 teaspoon garlic powder
- 1 Tbsp finely chopped fresh parsley leaves
- salt and pepper to taste
Bake or microwave your potatoes until they’re tender. Slice the potatoes longways about half an inch thick. You should get about two to three skins per potato depending upon the size of your potato. Top with desired amount of cheese and bacon and place in the oven on 350F for about 8 to 10 minutes or until the cheese is well melted.
While the potatoes are baking, mix sour cream, garlic powder, and parsley in a small dish. Add salt and pepper to taste.
Place a dollop of sour cream on each potato skin when they’re done. Eat as it or dip it in your favorite ranch dressing!
